buckwheat - 100 g;

onions - 1 pc .;

carrots - 1 pc .;

salt, pepper, bay leaf, vegetable oil;

Soak dried mushrooms for 2 hours in warm water.

  • 600 gr. potatoes
  • 150 gr. onion
  • 200 gr. carrot
  • olive oil
  • ground black pepper
  • dill

Cooking method

    Wash buckwheat and mushrooms.

    Soak mushrooms in a little water for 10 minutes. Dried mushrooms can be replaced with frozen or fresh forest. In this case, they will need to be put out with onions and carrots.

    Wash potatoes, peel and cut into small cubes. Pour water into a saucepan and boil buckwheat and mushrooms. After boiling water, add potatoes and cook until all ingredients are ready, about 15 minutes.

    Peel and finely chop the onions, peel the carrots and grate them on a coarse grater.

    Fry the vegetables in a frying pan with a small amount olive oil until soft onions, about 10 minutes. If necessary, add a small amount of water to the pan to prevent the vegetables from burning.

    Add stewed vegetables to the pan with buckwheat and mushrooms. Add salt, black pepper, more water, if necessary, and let the soup simmer for another 5 minutes.

  6. Peel the potatoes and cut them into medium cubes. Rinse buckwheat under running cold water. Add it to the pan in the vegetables and pour in 2 liters of hot water. Make a small fire and after boiling continue cooking the soup for about 15 minutes.
  7. Salt and pepper, add other spices to your taste.
  8. Rinse the herbs under running cold water. Finely chop it and put in the soup. Let less than a minute leave and you can remove from the fire. Close the pot tightly, let it stand for 10 to 15 minutes.
